Garlicky Tofufeatured

A healthy and quick recipe for busy days. It is packed with delicious fresh herbs with just the amount of garlic and heat! Perfect with a side of brown rice or quinoa.
Ingredients
- 1/3 cup chicken broth
- 1 16 oz package of firm organic tofu, sliced to about 3/4 in cubes
- 1/2 cup chopped cilantro
- 1 tbsp finely chopped jalapeno pepper
- 1 tbsp minced garlic
- Salt and pepper for taste
- 1/2 tsp garlic powder
- 1 tbsp olive oil
- 1/2 cup chopped onion
Heat olive oil on medium high in a large nonstick pan. Sauté garlic, onion and jalapeno pepper for 3-4 minutes on medium heat to release the aroma.
Carefully, add the tofu to the pan.
Pour in 1/3 cup chicken broth. Add garlic powder. Stir gently and reduce the heat to medium low. Cook for about 5-6 minutes to allow the liquid flavor to absorb into the tofu.
Turn off heat. Season with salt and pepper. Plate the dish and place fresh cilantro on top.
